Ontrack® PowerControls™ is a simple, yet powerful tool for copying and searching mailbox data directly from Microsoft® Exchange Server backups, un-mounted databases (.edb), and Information Store files.
Apparently, this software is pretty commonly used to restore individual messages, etc. from full backups of exchange. Then you don't need to do bricklevel backups, because you can do brick level restores.
